This kale, orzo, and feta summer side salad will be a family favorite this summer.<\/p>\n\n\n\n<p><strong>Here&#8217;s how to make it!<\/strong><\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter\"><a href=\"https:\/\/theeducatorsspinonit.com\/wp-content\/uploads\/2014\/05\/2.png\"><img decoding=\"async\" src=\"https:\/\/theeducatorsspinonit.com\/wp-content\/uploads\/2014\/05\/2.png\" alt=\"Kale, Orzo and Feta Salad #cookingwithkids\" title=\"\"\/><\/a><\/figure><\/div>\n\n\n<p>You all know that my kids and I LOVE to <a href=\"https:\/\/theeducatorsspinonit.com\/kids-gardening\" target=\"_blank\" rel=\"noopener noreferrer\">garden<\/a>, we are also in the kitchen <a href=\"https:\/\/theeducatorsspinonit.com\/cooking-with-kids\" target=\"_blank\" rel=\"noopener noreferrer\">cooking <\/a>all the time,<\/p>\n\n\n\n<p>and<\/p>\n\n\n\n<p>I&#8217;m a steakhouse kinda mom.<\/p>\n\n\n\n<p>SO, I decided to create an original recipe inspired by&nbsp;&nbsp;Rosen Shingle Creek dining options&nbsp;<a href=\"http:\/\/www.landrememberedrestaurant.com\/\" target=\"_blank\" rel=\"nofollow noopener noreferrer\" title=\"A Land Remembered\">A Land Remembered<\/a>&nbsp;\u2013 Steakhouse to be entered into the contest <i>AND I used what we had in the garden: fresh Kale and cherry tomatoes.<\/i> It is my original recipe to the best of my knowledge!<\/p>\n\n\n\n<p>(I sent the little guy to get all the veggies, since he likes to take all the &#8220;balls&#8221; off the tomato plants no matter what color they are. Back inside he helped wash everything in the sink and also insisted upon &#8220;cooking&#8221; too! He added the vegetables, stirred, and mixed it all up! We call it Garden to Table)<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter is-resized\"><a href=\"https:\/\/theeducatorsspinonit.com\/wp-content\/uploads\/2014\/05\/gardentotable.jpg\"><img decoding=\"async\" src=\"https:\/\/theeducatorsspinonit.com\/wp-content\/uploads\/2014\/05\/gardentotable.jpg\" alt=\"\" width=\"685\" height=\"532\"\/><\/a><\/figure><\/div>\n\n\n<p>This <b>Kale, Orzo &amp; Feta Summer Salad <\/b>would make a great side dish to a grilled chicken breast!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Kale, Orzo &amp; Feta Summer Salad Recipe<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients:<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\/2 cup of thin sliced Kale<\/li>\n\n\n\n<li>1 tablespoon olive oil<\/li>\n\n\n\n<li>1\/4 teaspoon of salt<\/li>\n\n\n\n<li>1\/4 cup of crumbled feta<\/li>\n\n\n\n<li>1 cup of cooked orzo<\/li>\n\n\n\n<li>1\/2 cup of cherry tomatoes<\/li>\n\n\n\n<li>sprig of fresh basil finely chopped<\/li>\n\n\n\n<li>dash of crushed red pepper<\/li>\n\n\n\n<li>juice from 1\/2 fresh lemon<\/li>\n<\/ul>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter is-resized\"><a href=\"https:\/\/theeducatorsspinonit.com\/wp-content\/uploads\/2014\/05\/IMG_3046.jpg\"><img decoding=\"async\" src=\"https:\/\/theeducatorsspinonit.com\/wp-content\/uploads\/2014\/05\/IMG_3046.jpg\" alt=\"Kale, orzo, and Feta Summer Salad\" width=\"800\" height=\"533\" title=\"\"\/><\/a><\/figure><\/div>\n\n\n<h3 class=\"wp-block-heading\">Directions:<\/h3>\n\n\n\n<p>1. Mix together thin sliced Kale, olive oil and salt in a medium size bowl, let stand for 30 minutes.<br>2. Add the remaining ingredients and mix.<br>3.
